Ingredients
  • 200 gram green/red lentils
  • 1/2 unit leek
  • 1/2 unit onion
  • 2 unit carrots
  • 1 unit Potato
  • 1 unit tomato
  • 2 unit garlic
  • 1 unit bay leaf
  • 3 Tbsp olive oil
  • 1/ 2 unit Red pepper
  • 1 Tbsp Dash red pepper flakes
  • Salt and pepper

Instructions
  1. Wash, peel and cut all the vegetables
  2. Heat a large pot over medium heat. Once hot, add the olive oil, garlic, onion, carrots and leek. Season with a bit of salt and pepper and stir and saute for 4-5 minutes until tender and brown
  3. Add potatoes, tomatoes and the sweet paprika. Stir and cook for 2 minutes more
  4. Wash and drain the lentils and add them to the pot. Add water or vegetable stock until they are covered( up to 3 fingers above. Simmer uncovered for 20 minutes or until the lentils and potatoes are tender.
  5. It is great to accompany this with brown rice! Enjoy
