Heat a large pot over medium heat. Once hot, add the olive oil, garlic, onion, carrots and leek. Season with a bit of salt and pepper and stir and saute for 4-5 minutes until tender and brown
Add potatoes, tomatoes and the sweet paprika. Stir and cook for 2 minutes more
Wash and drain the lentils and add them to the pot. Add water or vegetable stock until they are covered( up to 3 fingers above. Simmer uncovered for 20 minutes or until the lentils and potatoes are tender.
It is great to accompany this with brown rice! Enjoy
