Large Tomatoes (heirloom or Roma are good choices)
Fresh basil leaves
Your favorite vinaigrette
Your favorite pre-made Italian seasoning (or equal parts dried oregano, basil and thyme works too)
Cut multiple slices in each tomato that start at the top and stop about three-fourths of the way down so that each slice is still attached to the bottom of the tomato.
Gently insert baked pancetta, avocado slices, and basil leaves between each tomato slice.
Drizzle everything with your favorite vinaigrette, and finally season generously with your favorite pre-made Italian seasoning
