Ingredients

Free range organic eggs
Half a bunch of Asparagus
(when out of season can substitute any green vegetable like broccoli)

Oatly Oat Milk

small Red Onions

Red pepper

Orange Pepper

Yellow pepper
Small thumb size piece of Ginger

Swiss Marigold Bouillon

(spinach, watercress, rocket)

Instructions
Chop all the ingredients into fairly small pieces
Put the teaspoon of coconut oil into the frying pan
Add all chopped ingredients to the pan
Fry for about 5 minutes on a low heat
Add all the spices except the Bouillon
Continue frying for further 5 ‘ 8 minutes
Beat the eggs and add a pinch of the Bouillon to the egg mixture
Add the Oat milk to the mix and beat well
Add the egg mixture to the pan
Cook for about 5 minutes on a low heat (do not burn the bottom)
Place under the grill (still in the pan) for about 3 minutes
Make sure NOT to burn it
Serve cut in ‘pizza slices’ with a green side salad
