Ingredients

Free range organic eggs
-
Half a bunch of Asparagus (when out of season can substitute any green vegetable like broccoli)

125 ml
Oatly Oat Milk

small Red Onions

1/2
Red pepper

1/2
Orange Pepper

1/2
Yellow pepper
-
Small thumb size piece of Ginger

cloves garlic

1 tsp
turmeric

1 tsp
cayenne pepper

1 tsp
Black pepper

1 tsp
Swiss Marigold Bouillon

1.5 tsp
coconut oil
-
90 g
Green salad (spinach, watercress, rocket)
Servings:
Instructions
Chop all the ingredients into fairly small pieces
Put the teaspoon of coconut oil into the frying pan
Add all chopped ingredients to the pan
Fry for about 5 minutes on a low heat
Add all the spices except the Bouillon
Continue frying for further 5 ' 8 minutes
Beat the eggs and add a pinch of the Bouillon to the egg mixture
Add the Oat milk to the mix and beat well
Add the egg mixture to the pan
Cook for about 5 minutes on a low heat (do not burn the bottom)
Place under the grill (still in the pan) for about 3 minutes

Serve cut in 'pizza slices' with a green side salad
