Raw beetroot salad with Goat's cheese

Ingredients

4 medium
beetroot bulbs

1/4 cup
olive oil
-
1 tbsp
apple cider vinegar

1 tbsp
mustard
-
pinch Himalayan Crystal Salt

3 tbsps
goat yogurt

carrots
-
1/4 cup
walnut halves coarsely choppe

40 g
goat's cheese crumbled
Servings:
Instructions
Wash the beetroots, top and tail and then spiralize each one using the small noodle blade. Snip long strands into shorter lengths for easier eating.
Do the same with the carrots.
Arrange on serving plates.
Whisk together the remaining ingredients and taste and season.
Drizzle the dressing over the beetroot. Sprinkle with walnuts and goat's cheese, and serve immediately.
