Ingredients

1/2 cup
uncooked quinoa
-
1 piece
Shallot or 1/4 red onion
-
1/2 clove
garlic
-
1 larcge
tomato
-
1.5 inches
cucumber
-
1/4 hadfull
pomegranate seeds**
-
1 tbsp
olive oil
-
handfull of fresh parsley
-
handfull of fresh mint
-
spinkle of pumpking seeds

Instructions
Rinse and cook quinoa in boiling water for 10 minutes
Wash, peel and prepare all remaining ingredients and place in a bowl while the quinoa is cooking
Drain quinoa in cold water. Rnse and combine with other ingredients
Delicious with grrilled fish or chicken or on its own
If we add another source of protein to the dish would be for 4 servings
