Quick Shrimp Scampi With Squash Noodles

Ingredients
  • 2 tbsps melted organic coconut oil melted
  • 1 lb medium shrimp peeled and deveined
  • 3 cloves garlic minced
  • 1/2 tsp Red pepper flakes or more, to taste
  • 1/4 cup chicken stock
  • Juice of 1 lemon
  • Himalayan Crystal Salt and freshly ground black pepper to taste
  • 1 1/2 lbs courgette spiralized
  • 2 tbsps freshly grated hard Goat’s cheese
  • 2 tbsps fresh parsley leaves chopped

Instructions
  1. Melt butter in a large frying pan over medium high heat. Add shrimp, garlic and red pepper flakes. Cook, stirring occasionally, until pink, about 2-3 minutes.
  2. Stir in chicken stock and lemon juice; season with salt and pepper, to taste. Bring to a simmer; stir in courgette noodles until well combined, about 1-2 minutes.
  3. Serve immediately, garnished with Goat’s cheese and parsley, if desired.
