Ingredients
  • 1 bunch spring onions
  • 15 g Fresh Coriander
  • 3 root ginger thin slices
  • 2 star anise
  • 2 pints vegetable stock
  • 225 g pak choi or other Asian greens thinly sliced
  • 200 g FIRM tofo cut into 2 cm cubes
  • 4 tsp red miso
  • 3 tsp Japanese soya sauce
  • 1 fresh red chilli seeded

Instructions
  1. Finely chop the spring onion, and red chilli.
  2. In a large saucepan or soup pan, add the vegetable stock, red miso, star anise, root ginger, and chilli bring to the boil on a low heat.
  3. Now add the tofu, pak choi and soya sauce. Cook on a low heat for 10 minutes until pak choi is cooked but still slightly firm.
  4. Now add the chopped coriander and spring onion. Boil for a further 2 minutes and serve.
