or other Asian greens thinly sliced

FIRM tofo
cut into 2 cm cubes

red miso

Japanese soya sauce

Instructions
Finely chop the spring onion, and red chilli.
In a large saucepan or soup pan, add the vegetable stock, red miso, star anise, root ginger, and chilli bring to the boil on a low heat.
Now add the tofu, pak choi and soya sauce. Cook on a low heat for 10 minutes until pak choi is cooked but still slightly firm.
Now add the chopped coriander and spring onion. Boil for a further 2 minutes and serve.
