thai paste Make sure this is Vegetarian friendly Thai Taste or Tesco is normally great

coconut milk

oat milk

spinach

Small bunch of fresh coriander

leek

mange tout

green lentils

mushrooms

baby sweetcorn

Basmati Brown rice (30g/person)
Servings:
Instructions
Slice celery and rough cut the leek and onion
Sweat them off with the Thai paste
Add coconut milk and bring to the boil
Blend with the spinach and oat milk
Add sliced pak choi, sweetcorn, and mange tout
Add lentils and chicken. Boil until chicken is cooked. Approximately 10 minutes
Serve with brown basmati rice
Sprinkle with chopped corainder to serve
