Ingredients

bulgur wheat

1 large
ripe beef tomato chopped

spring onions chopped

cucumber chopped

28 g
pack of fresh parsley chopped

2 tbsp
coconut oil

2 tbsp
lemon juice
-
Dash of chilli to taste
Servings:
Instructions
Put bulgur wheat into a pan with 600ml/1 pint water.
Bring to the boil and simmer for 10-15 mins, then drain and rinse through with cold water.
Put into a large bowl and add tomato, spring onions and cucumber. Reserve a few mint leaves, then add remainder along with parsley.
Season with 1 tsp salt and plenty of freshly ground black pepper.
Pour over olive oil, lemon juice and chilli sauce, then mix. Cover and chill.
Sprinkle with reserved mint leaves to serve.
