Ingredients
  • 2 lbs chicken wings
  • 2 eggs
  • 1 tsp baking soda
  • 4 cloves medium garlic minced
  • fresh ginger (1-inch knob), minced or grated
  • 1/4 cup hot pepper paste
  • 3 tbsp coconut amino
  • 1 tbsp white wine vinegar
  • 3 tbsp maple syrup (optional)
  • 1 tbsp fish sauce
  • Himalayan Crystal Salt
  • Freshly ground black pepper

Instructions
  1. Preheat your oven to 425 F.
  2. In a large bowl, combine the eggs, baking soda, and season with salt and pepper to taste; whisk until well-emulsified.
  3. Toss in the chicken wings, making sure they are well coated; remove any excess egg.
  4. Arrange the chicken wings on a wire rack or directly on a baking sheet. place in the oven and cook for 30 to 35 minutes, turning them every 10 minutes.
  5. In a bowl, combine all the remaining ingredients, and stir well.
  6. Cook the sauce in a skillet placed over a medium heat, stirring frequently, until it thickens.
  7. Add the chicken wings to the sauce, toss until well coated, and serve.
