Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Combine dry ingredients in a large bowl.
In a small bowl, whisk together the egg, oil, and syrup.
Stir into dry ingredients until combined.
Scoop out about 2 heaping TBSP or so of dough, roll in hands into a ball, then flatten.
Bake for 8-9 minutes, then cool completely on a wire rack.
Cover one cookie with filling and top with another cookie! Sprinkle the side with dark chocolate chips!<
FIlling
In a food processor add your cashews and puree for about 10 minutes or so depending on how awesome your food processor is.
You will have to stop and scrape down the sides a few times. Once you start to get a smooth almost dough like consistency, slowly add the coconut oil and then a little bit of salt and puree some more.
For this recipe it doesn't have to be as finely textured as store bought nut butter, just as long as you have a nice smooth consistency you'll be fine, in fact the more dough like the better.
