Ingredients
Shrimp Skewers
  • 1 lb shrimp peeled
  • 2 bell peppers roughly chopped
  • organic virgin coconut oil
Shrimp Marinade
  • 1/4 cup fresh lemon juice
  • 1 clove garlic minced or pressed
  • 1/4 tsp Red pepper flakes
  • Salt and pepper
Mango Vinaigrette
  • 1/2 cup mango diced (can be fresh or frozen)
  • 2 tbsp fresh orange juice
  • 2 tbsp rice wine vinegar
  • 1 tbsp avocado oil or olive oil
  • Himalayan Crystal Salt just a dash
  • Pepper just a dash
Salad Ingredients
  • 2 cups mango chopped
  • 2 avocados diced
  • 1/2 cup red onion diced small
  • 8 cups salad greens (your choice)

Instructions
  1. Start with the marinade, combine ingredients, then add mixture to a container or plastic bag with the shrimp.
  2. Place in refrigerator for about 10 minutes, or just until you’ve made the vinaigrette.
  3. Next make the vinaigrette – just combine the ingredients and stir well.
  4. Assemble skewers, alternating shrimp and chopped peppers, then drizzle each with olive oil.
  5. Grill skewers over medium heat about 4-5 minutes, or until shrimp is opaque.
  6. Assemble salad, top with shrimp skewers, and drizzle vinaigrette over as desired.
  7. Enjoy!
