Ingredients
  • 2 tsp canola oil
  • 2 tbsp fresh ginger minced
  • 2 tsp garlic minced
  • 1 1/2 lb bok choy
  • 2 courgette
  • 3 tomatoes cut in small pieces
  • 4 salmon fillets
  • 6 reduced-sodium soy sauce
  • toasted sesame seeds Garnish

Instructions
  1. In a glass baking dish or large resealable plastic bag, combine the soy sauce, garlic, ginger, and pepper flakes (if using). Add the salmon, skin-side up. Cover and refrigerate for 30 minutes.
  2. Sauté the vegetables with the canola oil for 5 minutes and put the salmon skin side down with the vegetables for 7 minutes with a cover lead until cooked.
  3. Pour the marinade into the pan for the last minute.
