If you’re using chicken start by cooking it and then set it aside, also you can fry it with some lime and coconut oil. If you’re not, then just use more veg or add some avocado.
Chop all of your veg and dry roast the cashews for about three minutes. You can either chop the cashews or leave them whole. Then set everything out so you’re ready to go.
Fill a large shallow bowl with warm water. Use your hands to gradually slide the rice paper sheet into the bowl and hold it in there until it completely softens and looses all of its rigidity.
Then carefully lay the soft sheet out on a kitchen towel. Lay out your veg near the bottom of the rice sheet. Leave about an inch at each side also.
Then add in the chicken, avocado, mint and cashews.
Top with a large leaf of lettuce to hold everything in place.
Fold each side over the end of the filling.
Then tightly roll the up the sheet, starting at the bottom near the filling.
