Ingredients

500 g
organic turkey minced

Cherry tomatoes (or a tin of chopped tomatoes.)

4 cloves
garlic

Dessert spoon of Dried mixed Italian herbs or fresh basil

Glug Balsamic vinegar
-

Courgettes finely sliced length ways (use a mandolin)

cocktail sticks
-
organic virgin coconut oil

Salt and pepper
Servings:
Instructions
Dice the onion, and add to a pan with the turkey. Brown for 15 minutes.
In a mini blender, blend the tomatoes and garlic.
Add to the pan with the mixed herbs.

Add the balsamic vinegar, season with salt and black pepper.
Set aside and allow to cool.
Take the sliced courgettes and arrange two strips horizontally, and two strips diagonally.
In the centre square add the turkey.
Fold the parcel together.
Pin with the cocktails stick, to secure.
Season with black pepper.
Now take all the parcels and pan fry in coconut oil for 4 minutes each side on a high heat.Â
