Ingredients
  • 2 cups organic coconut cream (from the top of the coconut milk)
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 drop lemon zest
  • 1 pint red raspberries
  • 1 pint blueberries

Instructions
  1. Add the coconut cream* (make sure it is cold) to the bowl of a cold mixing bowl.
  2. Beat on medium-high speed until fluffy (about 2-3 minutes).
  3. Add the xylitol, vanilla mix to incorporate.
  4. Layer the raspberries in the bottom of 4 clear cups or glasses.
  5. Add a layer of the whipped cream or coconut cream.
  6. Finish with a layer of blueberries and top with additional coconut cream, if desired.
