Ingredients
  • 1 1/2 lb organic boneless chicken breast (or 3 cups shredded crock pot chicken)
  • 1 tbsp organic virgin coconut oil
  • 1 onion chopped
  • 4 celery chopped
  • 1 green pepper chopped
  • 4 large carrot stalks chopped
  • 2 cloves garlic crushes
  • 15 oz organic diced tomatoes
  • 15 oz organic tomato sauce
  • 1/2 cup hot sauce
  • 1 cup organic chicken broth
  • dash freshly ground pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 Jalapeno Pepper diced (optional)
  • 15 oz cannellini beans (optional)

Instructions
  1. Cook chicken. Option 1: Shredded Crock Pot Chicken Option 2: Place chicken in a pot and cover with water. Bring to a boil then reduce heat, cover, and let cook until chicken is fully cooked and shreddable (time will vary based on amount used).
  2. In a large pot heat the coconut oil and saute garlic.
  3. Add chopped carrots, onion, celery, peppers, cooked corn, and poblano pepper- let cook until translucent.
  4. Add in chicken broth, tomato sauce, and diced tomatoes and stir well.
  5. Add in 3 cups shredded chicken.
  6. Add in hot sauce and spices and mix well to combine
  7. Let simmer for 15 minutes.
  8. Taste and adjust spices as desired.
