Ingredients
Makes 22 meatballs
1lbground organic chicken
1large (or 2 small) courgettegrated
1medium onionfinely chopped
2egg whites(or 1 large egg)
2tbspmintchopped
2tbspParsleychopped
1tspHimalayan Crystal Salt
1/2tspcayenne pepper
1/2tspBlack pepper
1tspturmeric(optional)

Instructions
Preheat oven to 400°F (200°C) with a rack in the upper third of the oven. Line a baking sheet with parchment paper.
In a large bowl, combine all the ingredients and mix very well (using your hands will deliver better results).
Scoop one tablespoon of the mixture, shape into meatballs and arrange on the baking sheet.
If you feel particularly indulgent you can brush some coconut oil on top of the meatballs.
Place the baking sheet in the oven until meatballs are just cooked through, about 20 minutes.
Serve with homemade tomato sauce* and brown basmati rice.

*1 carton tomato passata ,1 onion, Himalayan Crystal Salt, 1/2 tbsp oregano, black pepper (optional) Chop and fry onion become light brown , mix the passata with onion, and cook it for five minutes, season with oregano.
