Instructions
Preheat oven to 375 degrees.
Poke holes in sweet potatoes with fork, and bake them for 30Â minutes, or until soft.
While your potatoes are cooking, cook your bacon in a skillet until brown and crispy. Remove bacon from pan and chop into small pieces. (I use tongs to keep the bacon in place while I chop it. It'll be hot!) Save bacon fat in pan.
When sweet potatoes are done cooking, peel them, place them in a bowl, and mash with a fork. Add eggs, leftover bacon fat, chopped cooked bacon, and chives. Mix well.
Then add your dry ingredients: coconut flour, baking powder, garlic powder, salt and pepper. Mix well.
Line a baking sheet with parchment paper and use a large spoon to drop your biscuits on the sheet. Shape as needed.
Place in oven and bake for 22-27 minutes. The tops will be slightly golden brown when done. And your kitchen will smell amazing.
Let rest until cool, then consume! This recipe makes 16 large biscuits.
