Grilled Vegetable Salad Stack with Balsamic Syrup

Ingredients

Red pepper

1 slice
aubergine
-
3 slices
courgette
-
broccoli florets
-
2
mushrooms
-
Syrup (balsamic vinegar, wheat free veg stock, garlic, lime, fresh herbs)

Instructions
Slice the vegetables into diagonal slices.
Grill the vegetables except the broccoli and season.
Boil the broccoli florets for a minute and then place in ice bath.
Put a hand full of mixed salad on the bottom and stack the vegetables accordingly and the florets on top.
Slice and saute the stock veg. Add the chopped garlic and fresh herbs (bay leaf, rosemary, thyme, ½ lime) and reduce until the consistency of syrup.
