Ingredients
  • 400 gm chickpeas rinsed and drained
  • 1 clove garlic chopped
  • handful Parsley flat-leaf or curly
  • 1 tsp ground cumin
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1 Spring onion
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 2 tbsp plain gram flour
  • 2 tbsp ½ cup Organic Virgin Coconut Oil plus more for greasing
  • wheat free tortilla
  • 1 tomato to serve
  • 6 tsp plain Goat’s yogurt
  • Little Gem lettuce to serve
  • 1 small red onion roughly chopped

Instructions
  1. Pat the chickpeas dry with kitchen paper then tip into a food processor along with the onion, garlic, parsley, spices, flour and a little himalayan crystal salt.
  2. Blend until fairly smooth, then shape into four patties with your hands.
  3. Heat the oil in a well oiled frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden.
  4. Serve with wheat free tortilla plain yogurt and tomato slices and little gem lettuce
