Blend the Pineapple, lime and xylitol, and cinnamon until you have a puree.
Stir or blend the coconut milk, and then stir in the dessicated coconut.
Pour into a freezer safe container and freeze for around 1 hour, until it is just setting at the edges. Then beat well or blend again. Return to the freezer for at least another 4 hours, or overnight, until it is set solid.
