Add all ingredients to a food processor and process on high until it becomes a sticky, crumbly mixture.
Divide the mixture in half and press it down firmly into two cavities of the tart molds. Set aside.
Add all the ingredients for the pudding to a blender and blend on high speed until everything is smooth and creamy. You may have to stop and scrape the sides a couple of times.
Transfer the mixture into the tart mold on top of the crust and spread it out so it's evenly distributed.
