Ingredients
For the Chicken:
  • 4 chicken tenders or 2 chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp Himalayan Crystal Salt
  • 1/2 tsp Pepper
  • 100 grams pine nuts
For the Salad:
  • 3 cups mixed greens
  • 1 avocado peeled and chopped
For the Coriander Vinaigrette:
  • 1 tbsp Fresh Coriander
  • 4 tbsp olive oil
  • 1 tsp lime juice
  • Himalayan Crystal Salt and pepper to taste

Instructions
  1. Add spices into the chicken breast and let it stand for about 10 minutes while you prepare the salad
  2. On a large plate or in a medium bowl, combine your salad washed and chopped salad ingredients.
  3. Pour a little bit of coconut oil in a pan and put the chicken fillets on medium heat, for about 4 minutes each side, until is cooked throughout. Set chicken aside on a paper towel-lined plate.
  4. In a food processor or blender, add vinaigrette ingredients and process until blended.
  5. Top salad with dressing and sliced chicken tenders. and the pine nuts and Enjoy!
