Ingredients
  • 1 cup raw cashews
  • 1/4 cup cup cold water
  • 1 tbsp maple syrup
  • 1 tsp lemon zest
  • 1/4 tsp vanilla extract
  • Himalayan Crystal Salt
  • 2 cup fresh fruit cut into bite size pieces
  • 1/3 cup 100% dark, unsweetened chocolate Chopped

Instructions
  1. Place cashews in a bowl and cover with warm water. Let sit 6 hours or overnight.
  2. Drain cashews and place in a blender with water, honey, lemon zest and salt; blend until smooth. Keep half of the cream some to add it to the mealted chocolate
  3. Place chopped chocolate in a medium heat-proof bowl and set aside
  4. Immediately pour cream over chocolate and let sit without stirring for 1 minute. Then, whisk mixture gently until completely melted and smooth. Allow to cool slightly before using.
  5. In a parfait glass or mason jar, layer fresh fruit, 2 heaping tablespoons cashew cream, some chocolate and start over again with as many layers as you want. Make the last layer the fruit.
  6. Enjoy!
