Ingredients
  • 3 Cups carrots Shredded
  • 1 Cup scallions(green onions) sliced
  • 3/4 Cup Tapioca Four
  • 2 cloves garlic Minced
  • 2 large organic eggs Beaten
  • 2 Tbls coconut oil
  • 1 Pinch chives To garnish

Instructions
  1. In a large mixing bowl, combine the shredded carrots, sliced scallions, minced garlic, tapioca starch, eggs, salt, and pepper. Mix well until combined.
  2. In a large frying pan, heat the Coconut oil and scoop ΒΌ cup mounds of mixture into the pan in a single layer, spacing the mounds at least 1 inch apart and flattening them slightly.
  3. Cook the fritters until they are golden brown and crispy on one side, about 2 to 3 minutes. Flip them and cook for another 1 to 2 minutes on the other side. Now be ready to enjoy your meal.
