Ingredients
- 2 carrots
- 2 medium beetroot
- 1 cup raisins
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 2 tbsp sunflower seeds leave a little to garnish at the end
Dressing Ingredients
- 2 mandarins juiced (about 1/2 cup)
- 2 tbsp avocado oil (aiming for equal quantity to mandarin juice)

Instructions
If your carrots and beetroot aren’t spray free or organic peel them then grate.
Then place everything into a big bowl and mix together.
When serving place dressing ingredients into a jar and shake.
Then drizzle the dressing over each individual serving and keep the undressed salad in the fridge for later.
To make this meal complete for me I served it up with some roast chicken.
